Focusing on the bright, vibrant flavors of Spring, we’ll prepare a menu designed to be as effortless as it is elegant. As we cook, we’ll dive into the "why" behind every sip, learning how to balance acidity, spice, and texture like a pro.

- Spring Salad of Pea Shoots, Sugar Snaps, and Butter Lettuce: A crisp, garden-fresh starter featuring creamy goat cheese, aromatic tarragon, and a bright Champagne vinaigrette.
- Drunken Clams with Chorizo and Herbs: We’ll use wine as a powerful steaming liquid to marry the briny sweetness of clams with the smoky heat of Spanish chorizo.
- Caramelized Spring Vegetables in Classic Beurre Blanc: Master the "king of French sauces"—a velvety, wine-reduction butter sauce that perfectly coats tender seasonal greens.
- Spiced Pork Tenderloin with Red Wine Reduction: A lesson in building depth. We’ll sear spiced pork and use the fond to create a rich, sophisticated red wine pan sauce.
- Rosé Poached Strawberries: A light, floral finish featuring strawberries simmered in Rosé, served with a honey biscuit and cloud-like vanilla whipped cream.
