Sharpen your skills with hands-on training in knife cuts, safety, and care. Master essential techniques like julienne, dice, and chiffonade while learning how to build bold, fresh flavors. Attention will be paid to how to best sharpen, clean and store your knives, too. Cap it all off by creating and enjoying zucchini tacos topped with elote salad!

About Dan:
Dan Hurlbut has spent over 20 years in the food industry, building a diverse culinary career. He has honed his skills in a range of settings—from fine dining restaurants and large scale hotels to fast-paced corporate dining environments. His journey ultimately led him to Honest Weight Food Co-op in Albany, NY, where he now serves as the Food Service Manager, overseeing a mission-driven kitchen focused on local, sustainable, and health-conscious offerings.
Dan's greatest joy has always been sharing his love of cooking with his two daughters, who have grown up by his side in the kitchen, learning to create delicious, memorable meals. A diagnosis of celiac disease sparked a personal and professional transformation, inspiring him to adapt many of his favorite dishes into flavorful gluten-free versions. Today, Dan is passionate about empowering others to feel confident in the kitchen—whether they’re learning foundational skills or exploring new ingredients—while celebrating bold flavors and reimagined culinary classics.
