Though Tapas is the Spanish word for Lid or Top, the entire Mediterranean loves small plates, Tapas, Aperitivo, Mezze or snacks. Come share a meal of small plates, lots of veggies and huge flavors. Chef Ric will share with you stories of his years in the restaurant industry and extensive travels to Italy. This class is permitted for students 21 years of age and older.
Menu:
-“Matrimonio” both salted and vinegared anchovies, tomato chermoula 
-Pickled Broccoli Rabe Toasts with smokey chickpea mash
-Taleggio Smothered Mushroom Toast with Sicilian Marsala 
-Black Cumin Roasted Baby Carrots with tahini-honey sauce 
-Swiss chard and “Prosciutto” Gratinata
-Lamb Keftedes Kebabs with garlic yogurt and tomato-mint salad
-Manchego and Quince Paste 
Allergen/Dietary Notice: The following items will be used fish, gluten, sesame seeds, lamb and dairy. The meal can be served vegetarian upon prior request.
