Join us as we explore the "New Wave" of Italian cooking! In this demonstration class, we’ll dive into a four-course menu that honors the structure of a traditional Italian meal while incorporating unexpected ingredients and modern techniques. We’re pushing the creative envelope without ever sacrificing the authentic soul of Italian flavor.
Menu:
- Antipasto: Caprese of Tomato and Mango with fresh basil and a bright lime zest.
- Primo: Asparagus and Goat Cheese Cannelloni finished with a tomato-savory cream.
- Secondo: Sunflower Pesto Crusted Cod served over creamy Gigante beans and wilted bitter greens.
- Dolce: A daring and delightful Gorgonzola “Gelato” paired with fruit stewed in Lambrusco.
