This demonstration-style class with Chef Ric highlights the region’s hyper-local, seasonal dishes—an elegant departure from the Italian-American classics we all know. For students 21+.

-Vitello Tonnato - Roasted Beef with “Tuna Sauce”
-Insalata “Bergera” - Salad of Celery, Hazelnuts and Parmigiano
-Ravioli del Plin- “‘Pinched ravioli’ With pumpkin-chevre filling, sage brown butter
-Chocolate Bunet- a creamy chocolate pudding
