Warm up your winter cooking with this creative, hands-on knife skills class led by Chef Dan Hurlbut. You’ll learn essential knife techniques — from dicing and julienning to supreming citrus — while preparing three inventive seasonal bruschettas that showcase flavor, color, and texture in every bite. Whether you’re new to the kitchen or sharpening your culinary edge, this class combines practical knife skills with approachable, restaurant-quality flavor — perfect for the home cook who loves to learn, taste, and create. This class is permitted for students 16 years of age and older.

-Butternut Squash with Maple, Goat Cheese & Fennel
-Citrus & Avocado with Chili Honey & Pistachio
-Caramelized Onion, Apple & Cheddar Whip
Each recipe is designed to serve four and can be enjoyed on toasted bread or one of several gluten-free bases like crispy polenta rounds, socca triangles, or roasted sweet potato slices. The gluten free bases will be served during class, but will not be prepared as part of the class.

About Chef Dan:
Dan Hurlbut has spent over 20 years in the food industry. His greatest joy is sharing his love of cooking with his two daughters, who have grown up creating delicious dishes alongside him. After being diagnosed with celiac disease, Dan was inspired to rework many of his favorite recipes to be gluten-free. He’s passionate about helping others build confidence in the kitchen while enjoying bold flavors and reimagined classics.
