In this hands-on experience, you’ll explore the energy and spirit of Japan’s bustling street markets while mastering essential skills—from balancing sweet, savory, and umami flavors to working with traditional ingredients and tools. Along the way, you’ll pick up insider tips, chef-level tricks, and a deeper appreciation for the culture and craftsmanship behind each bite.
Come hungry, get creative, and enjoy a fun, social night filled with delicious food, new skills, and a true taste of Japan. This class is for students 18 and up.
Menu:
- Okonomiyaki: Often dubbed "Japanese Pizza," this savory pancake is packed with cabbage, seafood, and veggies. Since it means “how you like it,” it’s basically the ultimate customizable comfort food.
- Yakitori: These chicken and scallion skewers are grilled with a tangy teriyaki-style sauce. Learn how a simple dish can pack so much punch.
- Yakisoba: Stir-fried noodles and vegetables tossed in a signature savory sauce. We’ll finish them with traditional pickled ginger and a sprinkle of aonori (powdered seaweed).

- About Yasuo and Kathy: After an apprenticeship in Tokyo for 12 years, Yasuo Saso came to Albany to invigorate the local sushi scene. He and his wife Kathy Saso operated Saso’s Japanese Noodle House for many years, a revered Albany landmark.
